Indulging in a delectable treat doesn't always have to come with a lengthy ingredient list and complex instructions. My favourite go-to is a simple yet nourishing sweet potato and dark chocolate cake – yes, you read it right. This surprising delight requires just two key ingredients, making it a vegan, gluten-free, and refined sugar-free masterpiece. The natural sweetness of sweet potatoes harmoniously combines with the richness of dark chocolate, creating a moist and decadent cake that satisfies both the sweet tooth and the desire for wholesome ingredients. The simplicity of this recipe proves that a delightful dessert can be both easy to make and nourishing for the body, making it a delightful choice for those seeking a healthier yet indulgent treat.

Ingredients

 

 3 medium size sweet potatoes
 200 grams + 100 grams 75% dark chocolate
 1/4 cup walnuts or any nuts that you prefer for garnish (optional)
  pinch of salt


Instructions

 

Preheat the oven to 420°F
1. Grease and line baking sheet with parchment paper where you will bake the sweet potatoes for 20-25 minutes (I cut them in a half to speed up the baking process).

2. When sweet potatoes are baked peel the skin and let them cool for 10 minutes.

 3.  Put them in a blender, combining them with 200 grams of 75% melted dark chocolate ( I melt the chocolate slowly with 1 teaspoon of coconut oil in a microwave or on the stove in a double boiler).

4.  Grease and line a round pan with parchment paper and transfer the mixture of sweet potatoes and chocolate in it.

5. Melt the rest of the remaining dark chocolate and put it on top of the cake (always you have an option to put something else on top instead chocolate ganache. Be creative : ).

6. Decorate the cake with nuts, coconut flakes or fruit and put it in a fridge for couple of hours before serve it.
