
Ingredients:
- 5-6 medium beets
- 1 medium size carrot
- Freshly ground pepper, and salt to taste
- 1 glove garlic
- 1 stalk of green onion finely chopped
- 1/3 cup any nuts of your choice
Dressing: - ¼ cup extra-virgin olive oil
- 2 tablespoons sherry vinegar, or rice vinegar
- ½ teaspoon Dijon mustard
- ½ teaspoon honey
- ½ teaspoon salt
Instructions:
Wash and grate the fresh beets and the carrot in a bowl. Add the garlic, nuts and fresh chopped
green onion. Mix and put the dressing in and the salad is ready to be served. Garnish with
cilantro or parsley.
