Beet Salad

Ingredients:

  •  5-6 medium beets
  • 1 medium size carrot
  • Freshly ground pepper, and salt to taste
  • 1 glove garlic
  • 1 stalk of green onion finely chopped
  • 1/3 cup any nuts of your choice
    Dressing:
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons sherry vinegar, or rice vinegar
  •  ½ teaspoon Dijon mustard
  • ½ teaspoon honey
  •  ½ teaspoon salt

Instructions:

Wash and grate the fresh beets and the carrot in a bowl. Add the garlic, nuts and fresh chopped
green onion. Mix and put the dressing in and the salad is ready to be served. Garnish with
cilantro or parsley.
