Carrot and Chickpea Salad

Ingredients:

  • 1 can chickpeas, drained and rinsed, approx. 2 cups
  • 1 cup grated carrot
  • 1 cup chopped parsley (I use more than that since its SO good for you!)
  • ½ cup sliced radishes, about 5
  • ½ cup chopped green onions
  • ¼ cup pumpkin seeds or sesame seeds or chopped walnuts, or whatever nut/seed you like

Dressing:

  • 3 tbsp. fresh lemon juice
  • 4 tbsp. olive oil
  • ½ tsp maple syrup
  • Salt and pepper to taste

Instructions:
Place half of the chickpeas into a mixing bowl and mash coarsely. Add the rest of the chickpeas
to the bowl along with the carrot, parsley, radishes, green onions and nuts or seeds. Mix dressing
ingredients in a small bowl and add to the salad, mix well.
