Millet chocolate mousse

Ingredients:

  • 1/2 cup of millet
  • 1 cup water
  • 1 cup of herbal drink of choice ( you can put coffee if you like)
  • 1/2 cup milk of your choice (I’m a coconut milk fan, but almond or cashew milk work their magic too)
  • 4-5 dates soaked in hot water for 5 minutes (you can add extra sweetener like maple syrup or stevia)
  • pinch of salt
  • 1 tsp of cinnamon
  • 1 tsp of vanilla extract
  • 3 tablespoon of cocoa powder
  • to serve: chopped, toasted hazelnuts or walnuts

Preparation:

1. Start washing the millet before you put it in the cookware with the water. Boil and add salt and cook over medium-high heat until the water evaporated and the millet is completely tender.

2. Add chopped and soaked dates and the herbal drink  to the cooked millet and cook for about 10 more minutes.

3. When it's cool enough transfer everything to the blender, add the milk,spices and cocoa and mix in a creamy pudding.

4. Grab fancy serving glasses and transfer the mousse into.

 5. Decorating the mousse with fresh fruit and nuts of your choice.
