Introduction
This light and nourishing apricot/peach almond cake is the kind of dessert that proves you don’t need traditional ingredients to create something truly delicious. Made without gluten, dairy, vegetable oil refined sugar, or eggs, it’s ideal for vegans, those with food sensitivities, or anyone observing fasting during Easter. With its soft texture, gentle sweetness from fruit, and bright citrus aroma, this cake feels wholesome yet indulgent—especially when served with fresh fruit and crunchy nuts.
Ingredients
- 3 cups almond flour
- ½ cup rice flour or coconut flour
- 1 cup carbonated water
- ½ cup coconut milk
- ½ cup coconut yogurt
- 1 cup coconut sugar
- 1/2 cup applesauce
- 3 teaspoons ground flax-seeds
- ¼ cup warm water (to soak flax-seeds)
- 2 big spoons apricot or peach jam (for the batter)
- 2 big spoons apricot jam (for topping)
- 1 tablespoon baking powder
- ⅓ teaspoon baking soda
- Zest of 1 lemon
Instructions
- Prepare the Flax “Egg”
- In a small bowl, mix ground flax-seeds with warm water.
- Let sit for about 5–10 minutes until thick and gel-like.
- Prepare the Batter
- Preheat your oven to 350°F (180°C).
- Lightly grease or line a baking pan.
- In a large bowl, combine:
- Carbonated water
- Coconut milk
- Coconut yogurt
- Sugar
- applesauce
- Flax mixture
- 2 big spoons jam
- Stir until smooth.
- Add Dry Ingredients
- Add almond flour, coconut or rice flour, baking powder, baking soda, and lemon zest.
- Mix gently until everything is well combined.
- **If the mixture is too thick add more water or if it’s too thin add more flour
- Bake
- Pour the batter into the prepared pan.
- Bake for 45–60 minutes, or until set and lightly golden.
- A toothpick inserted in the center should come out clean.
- Finish with Jam
- While the cake is still warm, spread 2 big spoons of apricot jam over the top.
- This adds shine, moisture, and natural sweetness.
Serving Suggestions
- Serve with fresh fruits (berries, sliced peaches, or citrus)
- Add a handful of nuts for crunch
- Optional: a spoon of coconut yogurt on the side
