Chia Seed Pudding with Coconut Milk

Ingredients

  • 1/2 cup chia seeds
  • 1 1/4 cup light coconut milk,
  • 1 tsp.  maple syrup
  •  1 cup fresh berries or mango

Instructions
1. Mix chia seeds, coconut milk and maple syrup in a bowl.
2. Let sit on the counter for 10 minutes, giving it a stir every 2-3 minutes
3. Cover and place it in the fridge to firm up for 1-2 hours

4. Serve it with mango or blueberries pure.
