Vegan and Nut- Free Chia Donuts

This is definitely my favourite dessert that can also be served as a breakfast or snack option. High in protein and fiber, it pairs perfectly with coffee or tea.

Ingredients

  • 1/4 cup sunflower seeds (ground)
  • 3/4 cup gluten-free oat flour
  • ½  cup chia seeds
  • 1/4 cup pumpkin seeds (ground)
  • 1/4 cup tapioca flour
  • ½ teaspoon ground cinnamon
  • 1 teas baking powder
  • 1/3 cup maple syrup
  • ½ cup non-dairy milk
     

Instructions

  1. Preheat the oven to 300°F (150°C). Lightly grease your donut (or muffin pan if you don’t have the donut one) with coconut oil.
    2. In a large bowl, first I will combine the dry ingredients; gluten-free oat flour, chia seeds, ground pumpkin and sunflower seeds, baking powder and cinnamon.
    3. Then I will add the wet ingredients; maple syrup, oat milk, and vanilla extract and stir until combined. The batter will be pretty runny so no worries.
    4. Spoon the batter into the pan, filling each cavity to the top. If you don’t have the donut pan you can bake them in a muffin pan.
    5. Bake the donuts for 22 to 26 minutes, until firm to the touch.
    6. Cool the donuts in the pan for about 10 minutes and then they should pop right out. Allow them to cool completely
  2. Optional you can melt dark vegan chocolate and dip one side of the donuts in it. Sprinkle them with coconut and they are ready to go.  Bone appetite!
